Welcome to my caffeinated, vegan-protein packed smoothie for the ultimate energy boost. Because let’s be REAL, who has time to drink coffee without the risk of it spilling all over themselves while chasing a toddler?
I curated this recipe after too many mornings of either no coffee (my nightmare), spilt coffee, or the unsatisfying experience of drinking cold coffee (no thanks). Don’t get me wrong, I love iced coffee from Starbucks, but only when I order it that way!
As a result, I crafted a way to ensure I get my caffeine dose along with a balanced breakfast to guarantee I feel my best and have sustained energy to keep up with my little dude. Let’s be real, is it even possible to mother a toddler caffeine-free??? … Not in this mama’s universe.
I call this smoothie recipe my MOM FUEL - Here’s the rundown:
+ A 4 oz cup of coffee. I just make my single cup of coffee in our Keurig (addicted) and choose the smallest size option. I pour that into my blender along with…
+ 1 scoop of vegan-protein powder (the chocolate flavor pairs well with coffee)
+ 1 cup almond milk
+ 2 large handfuls of spinach
+ ½ cup frozen berries
+ ½ frozen banana
+ a few drops (to taste) of Vanilla Cream Stevia Drops. I’m obsessed with these – I love every flavor but Vanilla Cream is my favorite because it tastes creamy without the calories.
+ If I’m really hungry, I’ll add in 1 tablespoon of almond butter.
+ And finally, push blend and… Voila! Your sweet and satisfying Mom Fuel is ready to enjoy!
I swear, you can barely taste the coffee, it just gives the smoothie a delicious rich, nutty flavor. By the way, this recipe produces a giant smoothie that will keep you full and energized till lunchtime or beyond. Making a healthy smoothie is also such a fun morning activity to do with your kiddos. My active little guy loves helping me make smoothies. We usually make a little one for him (caffeine-free, obviously… yikes coffee is the last thing he needs LOL!) and one for me.
